Oat and Whole Wheat Pancakes

Oat and Whole-Wheat Pancakes

(Inspired by Ellie Krieger's Whole-Wheat Pancake recipe)

Yields: 13 pancakes

Ingredients:
1 1/4 cup homemade oat flour (next "Homemade Oat Flour" post)
3/4 cup Whole-wheat Flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large eggs
1 3/4 cup unsweetened almond milk (for a thicker and fluffier pancake, add less liquid)
(Alternate option to almond milk, make buttermilk pancakes!  Mix 1 cup regular milk with 1 Tbsp white vinegar.  Allow to rest for 10 minutes.  After rest period, add to the remaining wet ingredients.  Use an additional 3/4 cup regular milk for thinner pancakes, or less for thicker and fluffier pancakes.)
1 Tbsp honey or alternative sweetener like agave nectar
1 tsp vanilla extract

Directions:

Mix dry ingredients in large bowl.
Mix wet ingredients in medium bowl.
Mix wet into dry, but don't over mix.
Scoop batter out with 1/4 cup measuring device.
