Everyday Breakfast Porridge (Oatmeal)

Everyday Breakfast Porridge

(Inspired by Tosco Reno's Everyday Breakfast Porridge recipe)


Yield: 2 X one-cup servings

Ingredients:
1 cup old fashioned oats (not quick oat or instant)
2 cups water, divided
2 Tbsp greek yogurt
1 tsp vanilla
1/2 to 1 tsp cinnamon
2 Tbsp ground flaxseed
2 Truvia packets
splash of unsweetened almond milk

Directions:
1. In a small bowl, mix oats, 1 cup heated water, and 2 Tbsp greek yogurt.  Put a plate over the bowl adn let it sit in the fridge overnight.
2. When you are ready for your hot oatmeal, bring one fresh cup of water to a boil in a pot.  Add soaked oats and vanilla (and salt if you desire).  Reduce heat and let simmer for 5 minutes.  Remove from heat.  Add cinnamon, truvia packets and flax seed.
3. Serve hot.
